Bag of carrot sticks, couple potatoes chopped into big pieces thrown into the crock pot. Roast on top of veggies, season with Montreal Steak Seasoning and dried chopped garlic (or whatever you like) add 2 cups water, 1/4 cup soy sauce and a couple bay leaves. Cook on Low for 8 hours.
I don't know if they have an aversion to eating green food but my favorite quick meal is pasta with avocado sauce (avocado - 1 per .5-.75 lb of pasta, a bit of olive oil, garlic, fresh basil and lemon juice in the food processor). Top with shredded parm. It's like a lemony creamy pesto sauce.

My parents gave us some ham steaks a while back. They were super easy. I just cooked them on the stove until they were done (maybe 10 minutes?) and served them with mashed potatoes. DH loved it.
I microwave the veggies according to the directions. Simultaneously I heat the chicken (f I'm starting with raw chicken, I cook it first) and mix in the sauce.. Then, when the veggies are done, I dump them in the skillet and mix it all together till it's good and mixed up.
This gets easier with time because you just better at making it, but I make stuffed shells frequently becuase it's something I know all of the kiddos will eat (even super picky DS1). I sometimes get the shells ready the night before (sans sauce) and then heat them up when I get home from work.
I also like to put salmon filets on a sheet of reynold's wrap (sprayed with cooking oil) and put pesto on top, then thin slices of tomato and a sprinkle of mozzarella. Bake at 350 for 15 minutes. I add another cookie sheet with broccoli/EVOO/Garlic to the oven and presto, dinner is served!
It's an easy and quick way to use up leftover pesto from pasta or gnocchi.

Crockpot salsa chicken: chicken in crockpot dump a jar of salsa over, cook on low 8ish hours. 30 minutes before serving stir to shred and add a brick of cream cheese. Serve with chips or in a tortilla wrap style. I add cheese to mine when serving.
Breakfast Casserole: bag of frozen diced potatoes, 12 eggs scrambled, dump over potatoes in 13x9 pan, top with cheese and crumbled bacon. Bake 350 for an hour. I usually add some salt, pepper, paprika, and chili powder to the potatoes for a little extra flavor.

Take chicken breasts and pour BBQ sauce over them (I use two kinds because I like getting a good tangy but sweet taste). Bake at 350. Serve with veggies. Done.
Bonus: Shred leftover BBQ chicken and put on bread. Yay BBQ chicken sandwich!
I also love my crockpot roast: Put roast in crockpot. Mix one packet of dry Italian dressing, one packet of dry ranch dressing and one packet of dry brown gravy with 1 cup water. Cook on low for 6-8 hours. Serve with instant mashed potatoes and rolls. (The sauce is a delish gravy!)
Cheddar chicken Brown chicken breasts and a small diced onion in a pan. Remove and add two cans cream of mushroom/celery soup and 4 oz shredded sharp cheddar cheese. Stir to mix, add chicken breasts. Cover and simmer until chicken is done, about 20 minutes. Serve over rice
ETA: the Creamy Taco Mac recipe PP posted is good but it makes a shit ton of food. When we made it I did 1/2 lb meat and 1 can of beans. I would do less pasta, maybe 6 ounces.
We don't make the compound butter topping, so the ingredients pretty much consist of steak, butter, salt and pepper. I typically toss a bag of steamed vegetables in the microwave while this is in the oven. Amazing dinner in 15 minutes.
quesadillas. take a tortilla, put it in a big pan over medium-low heat, put cheese on it (pre-grated or grate your own), fold over, cook til both sides are brown and the cheese is melted. I slice it into wedges, sometimes with kitchen scissors if I'm feeling lazy, but my H eats the whole slab at once like a caveman. Serve with salsa, sour cream, etc. You can serve microwaved frozen corn with chili powder stirred into it as a decent side... just follow the package instructions, dump it into a bowl and add like a teaspoon of chili powder.
I usually chop up whatever veg is in the crisper to be eaten and saute it for a couple minutes, with some salt & cumin, put it in a bowl or something, then put it over the cheese before I close the tortilla. eg, if I made some today I'd use corn (leftover kernels), scallions (my kid is bizarre and eats them like celery sticks so we always have some) and zucchini (I bought without thinking it through, lol). H also uses up any leftover meat he may have in the same way... he really likes sliced/shredded pork or chicken.
