I've never found a from scratch recipe that I loved so I buy the ghiradelli mix and throw in some raspberries, very yummy
I love the Ghiradelli mix. So good. The only bad thing about it is that I always have multiple on hand and they are so easy. I wouldn't bother making my own after using these and I make a lot of scratch desserts.

These are delicious.
Preheat oven to 350.
Melt in a saucepan on low: 1 1/2 sticks lightly salted butter 3 squares baker's chocolate
Whisk in the following: 1/4 c. cocoa powder 2 c. sugar 1 tsp vanilla pinch of salt 3 eggs, 1 at a time 1 c. flour
Grease an 8x8 pan. Bake for 30 minutes.
ETA: You can add a tiny bit of mint extract if you like mint. Around Christmas time, top with crushed candy canes. Another variation is to add almond extract and top with slivered almonds.
I make brownies from scratch here because the box mixes are about ~$5 each. The recipe is from a cookbook my SIL made as a fundraiser. Here is the recipe I've been using: 2 sticks butter, 4 large eggs, 2 cups sugar, dash of salt, 4 Tbsp. cocoa powder, 2 tsp vanilla 1 3/4 cup flour - 1 cup nuts optional
Preheat oven to 325 Grease and flour a 9x13 pan. Melt all butter. Beat eggs until bubbly. Add sugar, salt, cocoa, and vanilla to eggs and mix well. Gradually add flour to egg mixture, mixing well. Add the melted butter and mix. (Add nuts). Bake for about 30 minutes.
Be careful not to use too much flour or they turn out too cakey for my liking. Also, vodka works in place of vanilla - I used vodka in my latest batch because I was too lazy to go out and find vanilla, and they turned out really well. lol
ETA: I live in Shanghai hence the outrageous box mix prices and difficulty finding vanilla.
I follow the recipe on the Ghirardelli Sweet Ground Chocolate container:
2 eggs 3/4 cup sugar 1 teaspoon vanilla 1/2 cup butter, melted 3/4 cup ghirardelli ground chocolate 2/3 cup flour (do not sift) 1/4 teaspoon baking powder 1/4 teaspoon salt 1/2 cup chopped nuts (optional) 1 cup chocolate chips (optional)

Stir flour mixture into egg mixture.Stir until thick and glossy. Add nuts and chocolate chips. Combine well. Spread into a greased 8- or 9-inch square pan. Bake for 20-30 minutes. Cut into squares.
Makes 16-20 brownies.
For extra chewy brownies, use 8 inch pan and less baking time. For cake like brownies, use 9 inch pan and longer baking time.
Another vote for boxed mix. I do substitute coffee for the water (makes it richer, but you can't really detect a coffee taste) and I underbake a bit so they are more fudgey.

So I realize Brie already made her batch, but I have to contribute this recipe. My friend made it for New Years and I just about died. It's a layer of blondie, topped with a layer of oreo, topped with a layer of brownie. Even just the brownie layer was fudgey and amazing, but all together? Resplendent.
Ditto! Instead of raspberries I use chocolate chunks or peanut butter chips or toffee chips. So good. Oh and I like them chewy, so I don't bake them that long.

I have an espresso machine, so I use a shot plus a bit of water and let it cool a bit before adding it in. Instant would certainly work.
