I usually try to throw a whole bunch of stuff in the crockpot and hope it will last me most of the week and then when I realize it doesn't, i usually make fish with veggies or something like that. I'm exciting.

We don't have children yet so that helps. I enjoy cooking and sitting down to a home cooked meal and unwinding from the day with H. We eat late though, around 8.
Ok, I HAVE to share this homemade veggie burger recipe. It was a bit of a pain to make, but I ended up with 8 patties. Going to freeze a bunch to cook later. So good!! It can be made vegan and gluten free if necessary (I used an egg instead of the flax seed mixture, so not vegan):

I put together a few different recipes: cook bacon, set aside and drain most grease from pan, half the brussel sprouts and sautee them in the pan; add brown sugar, balsalmic vinegar and chopped onions to sprouts and crumble bacon on top
Anything tastes better with brown sugar, balsalmic and bacon
