So after deciding we would have to bring in a contractor to move the junction boxes, I talked H into installing the lights "for now" They're not centered where they need to be, but that's only really noticeable when you're sitting at the island. One has to be moved over about 4 inches. Despite that, I can't believe how adding two lights kicked it it up another few notches. These have been sitting in my closet for about 6 months now so there was a lot of anxiety over whether or not they'd work. I LOVE.

The top is a combination is stained plywood with a solid maple edge. I would never have thought plywood could be used in this manner but it looks awesome and it really kept the costs down.
Thanks for the kitchen love. I'm going to try and convince H to move the junction box above the island and "hopefully" I can patch/repair/finish the hold and then hang up the pendants as this weekends DIY. I can get the builder's electrician to come and move it for free, but with their schedule that can take 4 weeks and I'm itching to just get it done since we're sooooo close. Faucet comes on Tuesday.
It looks great! I can't even tell they are off from the picture. I'd give your husband a break and wait to get them moved for free. It's too much of a hassle in my opinion. Especially for that short of a move. Repairing the drywall properly might be hard since you're cutting again so close.
