I just made some BANGIN' chicken lo mein. I winged the recipe and it came out really good! I really want H to get out of the shower so we can freaking eat already. I am ravenous.

I just had the last of the lettuce wrap filling I made on Monday. Blech. They are good but I made a huge batch on Monday since H is OOT this week and I'm so.sick.of.them.
Marinated 2 sliced chicken breasts in 1/4 cup low sodium chicken broth 1/4 cup soy sauce 2 tsps rice vinegar 2 tsps sesame oil 1 tsp sriracha paste 1 tsp grated ginger 1 tsp honey for 20 minutes. then I used basically the same sauce but doubled it and added corn starch to put over stir fry vegetables and soba noodles.

we're also having lo mein, but vegetarian. snow peas, garlic, carrots, cabbage, etc. mmmm. I also have some frozen cocktail sized spring rolls so I will probably have some of those too.

I am eating leftover chicken & dumplings. Plus beer and basketball. And of course some of my lemon ice cream. EDIT: I have decided to exchange beer for cucumber vodka & soda. Yes.

I made a bunch of freezer meals on Sunday, so I've not had to do anything but pop crap in my oven all week. And cleanup? Tossing the aluminum pan - yesss. We had honey lime chicken enchiladas, which are my favorite.
