Typically it's a main dish (meat) w/veggies on the side and a salad. I don't eat starches like pasta or potatoes anymore but I will make them for DH a few nights a week.
I'm a grazer when H is OOT. I'll eat crackers and cheese, pretty much snacks, throughout the night. Or I'll eat roasted broccoli or sauteed kale or something like that. I'm pretty bad about defrosting meat during the week, for myself anyway.
I make easier dinners during the week - crockpot, pasta, one dish, tacos, stir fry, etc. I am for protein/veggie/carb, but sometimes I leave out the carb or the veggie.
I love one pot meals, but typically try to make a big variety of food. I get bored easily. Tonight I'm actually making a casserole (ground beef with taco seasoning topped with corn, green chilies, refried beans and cheese). Hopefully it will last a couple days. I love whole meals in the crock pot, soup, and will make either grilled cheese or biscuits. DH isn't a big fan of a piece of meat with sides, so I will cook them when I feel like it but not every week.
So basically, I don't have a typical weeknight meal!
