mystery dinner! it's either vegetable soup or brunswick stew, i'll find out when i get home. the dummy that put it in the freezer (probably me) didn't label it. it *could* be pasta sauce, but i think i saw a lima bean in there so i'm really banking on soup or stew.
it was pasta sauce. what i thought was a lima bean was actually a mushroom. ugh, i has psyched myself up for stew. sometimes mystery dinner is disappointing.
alzi Red curry sauce from Trader Joe's, pretty much, which makes it even better because it's so easy. It tastes amazing with firm tofu. I recently discovered that pouring boiling hot water over tofu and letting it sit for about 10 minutes, then squeezing all the liquid out of it before dicing and pan frying gives it fantastic consistency. So I do that, and while it sits I dice up red, yellow and orange baby bell peppers, onion and sweet potato. I saute while I make rice, then toss in the tofu and the curry sauce and let simmer until the potatoes are tender (that also give the tofu time to absorb the flavor. Takes about 20 minutes, in all.

Interesting re: tofu...I usually just press really hard for an hour to get all liquid out. Ill have to try it!
