For my brother's wedding, a family friend made this incredible chocolate fudge that's been in her Norwegian family for generations. So, so good.She boxed them up in cute little pre-printed boxes.
We got chocolate in the shape of houses, because we volunteered for Habitat for Humanity during our honeymoon and made a donation there with the rest of what we would have spent on favors. They mould chocolate in a ton of different shapes, so you might find something you like and I think they were maybe $1.75 pp.
We did a candy buffet with peanut M&M's (we got lucky that our wedding was in October so the Susan B. Komen pink M&M's were readily available and matched our colors), Swedish Fish, Hot Tamales, Cow Tails, gummy frogs and something else, a mix of our favorite candy. People really liked it (but we were eating Hot Tamales for a long long time after the wedding ).

We also did M&Ms. This is when personalizing them first became popular. Be aware, putting several hundred dollars worth of candy on your credit card will cause a fraud alert.
Another vote for edible favors. We did sugar cookies and people loved them. They also looked really pretty on the tables. I have a great vendor from etsy if you need one.

Also I just floated the idea to my dad, who responded "why do you need favors?"
I said I thought it'd be nice and he replied, "well a lot of things would be nice. Like giving out a whole case of wine, but that doesn't mean you need to do it."

I made pizzelles. It was a huge pain in the ass, but everyone loved them. I wrapped them in snowflake cellophane and tied it off with a pretty ribbon since it was a winter wedding. Thankfully, it was a small wedding.

We did salt water taffy - just got a crap ton of it and put it in big vases with plastic bags to the side and people could take what they wanted. But we also had our wedding in a beach town, so it kind of went with the locale.

ETA - M&Ms are fine. Though I also agree with your dad - they're not necessary.
They came in cute little boxes and we just tied ribbons around each box and put a little tag with our names and the date on them. They were so yummy and the box and ribbon matched our colors
