My smug newly married coworker told me today that she thought "cooking for one was just too depressing to consider" and she didn't know how I was able to cook actual meals knowing that I would be the only one to appreciate it.
So I present to you my depressing dinner for one.
I turned these lovely brussels sprouts
into this: Roasted brussels sprouts with bacon, shallots, and garlic
And I threw in a roasted chicken for good measure:
Isn't it crazy how Brussels sprouts are grown? When I first saw that stalk I was surprised.
And, go you, girl!
The first time I saw them on a stalk I had no idea what they were! And it must be common, because a woman asked me the same question today at Trader Joe's.
I wish I knew how to cook for one I waste alot of food
I was wasting food until I started planning out my week's meals. I cook dinner mostly so I have something good to eat for lunch (I would eat eggs for dinner if I didn't need leftovers for lunch), so I generally count the number of lunches and dinners I need for the week.
For example, on Sunday I cooked chicken thighs. I ate the biggest one for dinner, brought leftovers to lunch on Monday. Monday night I cooked a steak and ate half. Tuesday I brought the rest of the chicken thighs to work and went out for dinner. Today I ate the other half of the steak for lunch, and then made this dinner, which I will eat tomorrow night as well, since I'm going out for lunch. Most of my meals are simple - a meat and a vegetable and a salad.
Although I do admit that I hate that I have to cook AND clean up. And I get irrationally pissed off every week when I take out the trash because that was my ex's job.
