Rice and pinto beans :http://www.culinate.com/books/collections/all_books/40341/mexican_brown_rice_with_pinto_beans
Chicken- I put it in a 9x13 and sprinkle with Trader Joe's 21 Season salute. Then put a pat of butter on top. Bake for 20-30 minutes at 450. We'll have brown rice and a frozen veggie with it
As you can tell, I love Allrecipes, lol! We have a lot going on this week, so I'm kind of crock pot heavier than normal, but oh well. It also ensures that I eat, since my appetite has been pretty much nil and I'd rather fall asleep than cook dinner these days, lol.
2 tablespoons cooled sauce from the crock pot after being cooked
Fresh broccoli florets (as many as desired)
Hot cooked rice (brown rice, or riced cauliflower)
Directions 1. Place beef in a crock pot.
2. In a small bowl, combine consomme, soy sauce, brown sugar/honey, oil, and garlic. Pour over beef. Cook on low for 6-8 hours.
3. In a cup, stir cornstarch and sauce form the crock pot until smooth. Add to crock pot. Stir well to combine. (If your sauce is not thickening, try bringing your sauce to a boil on the stovetop with the corn starch mixture. Boil until your desired consistency is reached).
4. Add broccoli to the crock pot. Stir to combine.
5. Cover and cook an additional 30 minutes on high (the sauce has to boil for it to thicken).
Ok, I'm ready now. This past week has been so insanely busy at work, so I didn't end up cooking two of our meals. There's a bit of overflow from last week in here.
Monday: Smoked sausages, red bean and rice and okra Tuesday: Spaghetti and meatballs Wednesday: Meatball subs, fries and salad Thursday: leftovers and/or soup and grilled cheese Friday: Likely a stew or soup in the crock pot. I've been craving a good potato soup. H wants a seafood chowder

Meatloaf, broccoli & mashed potatoes White chicken chili Breakfast for dinner Fish -- probably baked salmon. Plus brussels sprouts. DH and the girls will eat that, I will make chicken stir fry for myself since I don't eat sea food. I figure from all that, we'll have a leftover night where we forage and I don't have to cook.
