We have pretty much landed on Hilton Head for our family vacation this year. We've got a 6 year old and our youngest will be almost 2 by that time. What are the must-dos/sees/eats? Thanks!

It's been a couple years since I went, but I think most of this information is still pretty relevant. We went every year from the time I was about 7 until I was 15, and less sporadically since then. It's a great place for family vacations.
Must dos are really beach and shopping (probably golf too if you do that, my family didn't...except the miniature variety.) You can rent bikes almost anywhere on the island and there are lots of bike paths, which makes it easy to get around. We also always did lots of sea-activities like deep see fishing, crabbing, and/or shrimping. Depending on how your kids do on boats, those last two are age appropriate. Crabbing involves a chicken neck on a string - no hook. Shrimping is just a big net on the back of the boat.
I loved Coligny plaza growing up - neat stores for kids and Rita's Italian Ice. Sea Pines is lovely to walk around, and Gregg Russell is still performing nightly concerts for the kids. Shelter Cove used to have a little craft fair on Tuesday nights, with fireworks, and their own kids' musician. Not sure if they're still doing that, but definitely check.
I love Crazy Crab and have so many great childhood memories of eating there, and their hush puppies and crab races. But the one that's off island is 100 times better than the one on island. Also Signes bakery is heavenly. And right down the street from the Salty Dog outlet.

I'd pick someplace like Hudson's or the Skull Creek Boathouse. Depending on when you're going, most of these types of restaurants will have live music in the evenings. They're both super family friendly, but you'll still get a great meal and cocktail. Also, they're both on the north end of the island, which is a nice change, since you'll likely spend most of your time on the south end.
Mi Tierra is my favorite place to eat. There's a location on the North End and one in Bluffton. There might also still be a location in the little plaza behind Atlanta Bread across from Hilton Head Plantation whose name is escaping me at the moment (near Wal-mart on the north end). That one isn't as good as the other two though.
