When you have people over for dinner, do you have a tried-and-true menu or a particular dish that goes over well? If so, care to share?
We really don't have people over for dinner much (small apartment + lots of dining out options nearby) but I love the idea of cooking at home, in theory. We invited a friend over for dinner next Monday night. It'll be casual and she's not picky at all, so the menu could be anything. The only restriction is that it can't be super elaborate because I'll be coming home from work and then cooking. Ideally, I'd like a dish that I can prep the night before. Thanks, ladies!
Also, Pasta Salad - - multiple different options/recipes - - is always good alongside something. You can make a big tasty batch the night before. A lot of the recipes are also better the next day anyway.I have one I love that we make with sun-dried tomatoes. I don't have it with me though I know I found it off the interwebs.
My go-to is also lasagna. It doesn't make a big mess and is easy to throw together. If you have any good crockpot recipes with a whole chicken that might be a good option too.
My favourite recipe that seems fancy and is stupid easy is pork tenderloin. You just throw a pork tenderloin or two into a 9x13 pan, put some salt, pepper, and garlic powder on it, and then pour some red wine on top. Bake, then take out the tenderloin and add beef broth powder to the wine. It takes less than 5 minutes to prep, tastes amazing, and looks pretty cool.
I guess I should have mentioned that I'd like to branch out from lasagna, as I know it's a good meal to prep the night before. Buuuuut maybe I should just suck it up and do it. Who doesn't love lasagna and lots of buttery garlic bread?
I have a variety of things that I make. Spinach and ricotta cannelloni, tomato bredie (South African dish - its basically lamb and tomato stew), beef bourguignon, chicken curry, slow roasted lamb that I cook overnight on low or pork tenderloin stuffed with cranberry and feta. It depends on who is coming.
Lasagna is one. I also do shredded beef tacos that everyone loves them I make it. I take a lean piece of beef, usually a London broil and taco seasoning and put it in the crockpot for 8 hours. Then shred it and have a make your own taco bar. I never have leftovers when I make this.
What about chicken pot pie? You could make it the night before and then throw back in the oven to reheat.
