So I made the mini omelets that you bake in a muffin tin this week. They turned out really good and quite tasty. I made these in an effort to eat breakfast and wanted something quick that I just warm up in the microwave.
My problem is the clean up. I sprayed the bottom of the muffin tin with Pam and those things still stuck like crazy. It was hard getting the eggs out of the pan without them falling apart. The tin is still soaking in my sink four days later. I think I created cement.
How can I remedy this? Do I need to buy a silicone muffin pan? Use paper liners? Spray the heck out of it with extra Pam?
I have made this recipe before with no problem getting them out of my super old non-fancy muffin tins. They even pulled away from the sides of the tins like in the photo.
My amateur-cook uneducated guess was that it had something to do with putting the veggies in first then pouring the egg on top?
I use paper liners. They still sometimes stick to my liners, but at least my pan is 99 percent clean afterwards. I hate the post-cleanup of egg muffins without liners.
I'm having the same problem! I tried tons of butter and even crisco and they still stuck like crazy. I think my H ruined our muffin tin scraping it with steel wool. I tried paper liners this week but the eggs just stuck to that like crazy, so I had to eat half of it off the paper. And then pan was still a mess (although less than with nothing). I just ordered a silicone pan. Based on my online research, hopefully that will work!
