Mon Ami Gabi at Paris. It is our fave. Sit on the patio so you can watch the Bellagio fountains. If you want a buffet, we liked the one at the Bellagio. We were not impressed by the buffet at the Mirage. We'd also enjoyed BLT Burger at the Mirage and Serendipity 3 at Caesar's. I haven't been but our friends came back raving about Scarpetta.
Since you are staying at Aria, definitely Julian Serrano's. It's tapas and was absolutely fabulous. I went with a big group and I think we ordered half the menu.
We love Jaleo and Holsteins at Cosmo. We weren't huge fans of STK or China Poblano at Cosmo. There's a really good wine bar in Cosmo with a great appetizer selection where we go when we just want a small bite to eat and some drinks.
I agree that for buffets the best is Wynn. I'm not a huge buffet person but we LOVE the Wynn's buffet.
At Bellagio we like Olives (sit out on the patio) and Fix.
I just got back from Vegas. We did Olives at The Bellagio, Hugos downtown on Fremont, and Tender at The Luxor for our dinners. Lunches we did Mon Ami Gabi, Margeritaville, and a little lunch place in The Venetian (where we stayed).
Be sure to hit up My Foto Bar in The Quad, it's such a cool store. Also, we did The Linq, which is the largest ferris wheel in the world, it had amazing views, and just opened! For shows we saw The Beatles Love, and Michael Jackson One, which was phenomenal!!

Wynn buffet for breakfast, Gordon Ramsay steak (dinner) or burGR (lunch), aureole at Mandalay Bay ($$$) for dinner or Burger Bar, also at MB for lunch, Stack at the Mirage.
