I posted this on Home and Garden but since this is my main hood, I decided to post here as well:
There are too many choices to commit but we want to paint before we move in.

I keep changing my minds from light to dark, greys to beiges. Our furniture is neutral with pops of color that I change out. I want to keep the molding and ceiling white.
Gray is my favorite neutral right now too. Finding the right gray is tricky, and IMO it's best used in rooms that get a ton of light. I think it would work in your living room, but I can't tell how much light the dining room gets. Do you have swatches? That's the best first step, tape up a bunch of swatches and see which ones you like the best. Then get a few sample cans and narrow it down further. Make sure to look at them during all times of the day, and in sun and overcast light. The right one will make itself known.
I've always been a fan of grey. My favorite grey is Ralph Lauren Mexican Feathergrass. It has a nice range of blue/green grey to beige-y grey. It's my go-to.
I tend to pick the paint color last, because there are 8 million paint colors, but only so many curtain fabrics/pieces of art etc. that I like for a room. So I'd figure out what else you're putting in the room and start there.
If you don't have anything planned yet and just want to get rid of the gold to start, try flipping through these and see if you get inspired:
I like several of the pp's suggestions, esp. Dr.G's pashmina and Weimaraner from Mrs.Spunky...very pretty.
We're just starting to work on paint colors for our house, so I've been lurking on H&G paint posts lately. There was one recently re: favorite Sherwin Williams greige colors: Agreeable Gray and Perfect Greige each got mentions.

To those who like Weimaraner, my ILs DR is that color and it is so cool. It almost changes colors based in the time of day - grey, brown, the slightest purple undertone (sounds weird but looks great). They have white board & batten on the lower wall and it is a nice contrast.

We just moved a week ago, so DH and I went through the same thing!
We used Benjamin Moore Stone House (#1039) for most of the house. It's a medium beige, and we're very happy with it. We used Muslin (same color tab, just two shades lighter) in our master bedroom, and we like that too.
grey!! we actually have kind of a beige-ish grey. I wouldn't call it a greige, because it's more grey. Grey is really hard to find because it can have so many other colors in it.
