lolo here are couple of the recipes I use. I always use whole wheat flour and sometimes I add ground flax seed. For the vanilla berry one I often make it with just frozen blueberries although I have made it with frozen mixed berries too. Anytime it asks for soy milk or alternative dairy milk I use oat milk (J drinks a mixture of oat and coconut and I like oat for cooking). I have made all of these recipes in muffin and bread form. I usually decrease the sugar quite a bit too.
I also have a recipe for dairy/egg free pancakes. I'll have to find the link for it as DH usually makes them.
