I ordered shoes for DD early this morning that I need for next weekend. Normally when I buy from Ebay I get an email super fast (usually day of purchase) that the item has shipped. I've heard nothing all day. So I sent an email to the seller asking about it and have heard nothing - it's been over 2 hours. Am I panicking for no reason? And how good is ebay at resolving this stuff if it winds up becoming a problem?

Did you make sure to pay for expedited shipping and let the seller know your deadline? I ask because sometimes sellers have a handling period of a day or more before they even ship out.

It's entirely possible that the seller had already left for work, to take their child to school, etc., before you made your purchase. I sell stuff on eBay, but I also have a job, so if someone buys one of my items during the day, it's not going out until the next day, since I can't leave work to go home, package the item up, and take it to the post office.
You are definitely overreacting. Two hours is not a lot of time to wait for an e-mail response. Give it at least 24 hours.
I had made the purchase at 5:30am EST and the seller is in Calif. so they definitely would be aware of it early in their day assuming they check their stuff regularly. I grew concerned because it had been well over 12 hours and I hadn't heard anything and the seller has a small number of reviews complaining about items not shipping. But I just checked my email this morning and the seller wrote me back saying she's sending it out today so it should be fine for next weekend.
