It's been frozen so no meatloaf or patties and the husband doesn't like stuffed peppers or red sauce. I make Shepherds pie and Mexican food often and am looking for something new. Any suggestions? TIA

Can I ask what being frozen has to do with no meatloaf or patties? I have ground beef in the freezer I'm using for hamburgers later this week, so I'm just curious.
As for other suggestions, a couple of weeks ago I cooked some bacon, then browned the ground beef in the bacon fat. Tossed in some garlic, onions, and spinach and served the whole thing over pasta.
I use really lean meat and it crumbles if it has been frozen.
Add an egg, some seasoned breadcrumbs, powdered onion and garlic, Worcestershire sauce, and a healthy pour of olive oil (1-2 tablespoons; over 4-6 patties it's really not that much added fat).
I used frozen really lean ground beef all the time for burgers and meatballs. Adding the olive oil bumps up the fat content and they stick together better.
