Behead them, aka, take out the green part at the top, and put them in freezer bags to freeze. Do not wash them first, and they freeze very well. Just wash them when you take them out to use. You could also make us all some strawberry shortcake :-).
Fruit leathers are super easy if you have a food dehydrator. You could probably use an oven on a very low temp, though. Just remove tops, cook down a little bit and blend. Then dehydrate in a thin layer. If you use an oven, I'd line a jelly roll pan with parchment paper and grease the parchment paper with coconut oil before pouring the strawberry puree on. Then dry in the oven as low as your oven will go (my oven's lowest temp is 170 degrees).
However, all the farms sites I reviewed (and what I saw there) said all the berries would be picked by 11 AM, so today might not work for you.
Thx! We went north and luckily the farm we went to was really quiet and had tons of ripe berries left! We got 3 lbs, though we could have picked a lt more. I have no idea what I'd do with 18 lbs! That's insane! Although we plan to just eat ours, no spec to freeze sadly! I can't believe the difference between fresh picked strawberries and store.

I froze a bunch, am going to make the suggest cake, and do some jam today!
This recipe comes courtesy of Paul Wackym's mother out in Tyler. She served it at Easter dinner this year. Paul is our fabulous cookie guy . . . so now we know where he gets at least some of his creativity.
Ingredients: 3 cup sliced strawberries 1 cup sugar ¾ cup water 2 tsp arrowroot 1 cup red wine 1 cup orange juice 2 cup sour cream
Directions: Bring to boil, and then simmer 5 minutes: strawberries, sugar, ½ cup water . Combine arrowroot and ¼ cup water to dissolve. Add arrowroot, red wine and orange juice, return to boil, stir until thick. Puree in blender until smooth and add sour cream. Refrigerate until cold. Serve with sliced berries.
We picked and froze 26 quarts of strawberries this past weekend (yes, you have to go early in the day - fields open at 8:00, people are lined up at 7:30 and they are pretty picked over well before noon). Use them for the assorted suggestions already given thru the year. We are waiting for the blueberries next.
