DH and I went to an auction at an Amish homestead. They served a meal of grilled chicken quarters, baked beans, potato salad, and this delicious fruit salad. It's the fruit salad I'm trying to duplicate.
It had blueberries, grapes, strawberries,and maybe something else...pear? Anyway, the fruit isn't the speciality, it's the glaze. It was a redish, gel-like glaze. It wasn't "hard set" like jello, but it was thick enough that the fruit didn't slosh around in it either. It was sweet and tart, and I'm sure it was filled with sugar, but it was delicious, and I'd love to be able to recreate it.

Due to the nature of the Amish, I have to bet it's not just store bought strawberry glaze. What would a soft-set jello glaze be like after overnight refrigeration? I took mine to go, and I didn't eat it until this morning. Dh loved it at the picnic, when it had the same viscosity as mine. Wouldn't jello set up in the fridge overnight?
Maybe something like this? I haven't made this recipe before, I was just searching around. If it was red, maybe strawberry or cherry instead of the vanilla?

I saw the recipe jcbarbee posted and think the visual is spot on, and it sounds delicious, so I might try it just I try it. And prudence, you're so right. I should also try strawberry glaze adapted from a pie recipe.
