It has gone well for us as long as you don't expect normal sleeping schedules to apply while camping. We bring all the food with us and cook on site with some lunches being easy things like pb&j and fruit that we can bring with us to the beach, hiking, or whatever other activity we are doing. The kids loved playing in the dirt and mud, going to the beach, and having s'mores around the campfire with friends.
Eta: Essentials for us were sunscreen, bug spray, stuff for s'mores (B knows he gets them when camping and asked about them), cooler full of ice and food, 5 gallon drink cooler with ice water, swimming stuff (we camped by a lake and had a lot of beach time), shoes for both beach and running (crocs/sandals and sneakers), diapers/wipes (not worried about pting when camping), and plenty of snacks (they get hungry running around outside).

We camp in a camper.
If you don't have a fridge, 2 days of fresh food is prob the limit. I suggest cooking chicken before going then warming it up. I did salsa chicken, shredded itc then made quesadillas on a camp stove in a pan.
PBJ lunches. Or some pasta salad you can make ahead.
Eggs for breakfast. You can get eggbeaters to make it easy. I also got the pre cooked bacon, some cheese, some beans, tortillas. Burritos for us, deconstructed burritos for the kids.

We went for the first time this year a couple weeks ago, we had a great time. We were right on the beach so there was plenty for the kids to do swimming and playing in the sand. We always bring all of our own food and cook. We brought pb&j for mace for lunch, hot dogs to grill for dinner and cereal for breakfast. I also made chicken salad for us and we brought lunch meat and a bunch of food to grill. Potato salad and chips and stuff for snacks. Plenty of drinks. Main essentials for us were tons of bug spray and sunblock. I brought her keens so she could run around on the dirt and stuff. She did get a nap one day, she just passed out randomly. The other day we tried to get her to nap in the camper and she wouldn't. We brought her sleeping bag and blankets and pillows for her to sleep on. She slept pretty well at night. Oh and for us it got really cold at night, I should have brought more warm clothes like fleece jammies for her. She needed a lot of changes of clothes with it being hot in the day and cold at night I think I ran out of clothes for both of us actually.

Where did you guys go? You are New England, right?
We we don't have a camper so I bet we can only pack a few meals and snacks
We've gone a few times, and it 's mostly been great (except for tenting through the tropical storm over the 4th with a very frightened little boy).
We pack non refrigerated food basics and eat most meals out, if possible (the same as at home). The packed items are PB&J, organic milk juice boxes, fruit, hard cheese, beer, wine, etc.
I've made coffee in a French press with water I boiled over a campfire. Friends have one of those little Italian percolator things and made coffee on a propane stove.

Nope we're in michigan. We were up on Lake Huron. We have a propane camping stove/grill. My ILs just bought this pop up camper and let us use it, it was great. It has a cooler inside and the ice didn't even melt for 2 days.
We have this car battery charger thing for when we tent camp which is what we usually do, but you charge it up and it has little things that you can plug your plugs into so you can have electricity. Then we would bring like our old coffeemaker and just use that to plug it into.
We've gone on weekend trips a few times, but I went camping a lot as a kid. Recently we've been to Assateague Island and the rest have been in New England / forest in Maryland. We have a little propane stove with two burners that we use for breakfast because we normally don't want to get a fire going in the morning, but you normally went something hot because it's chilly in the morning. We take a hot water kettle for cocoa, coffee, or hot water for instant oatmeal, a cast iron skillet for pancakes and sausage. They make just add water pancake mix that works out pretty well! Lunches are normally pb&j with fruit and chips. Hot dogs or grill sausages are easy campfire dinners. We've also had good luck with foil packet dinners - chicken with sauce and veggies in a foil packet cooked over the campfire grill. If you're staying longer than a few days, you could take canned goods if there aren't a lot of stores nearby - beef stew with rice is a good camping meal as is chili. Bug spray and sunscreen are definite musts. We like to have a pair of sandals / tent shoes so that you're not tracking dirt into the tent all of the time and for the bathhouse because I don't trust public showers! A small flashlight for each kid - they always want to hold the flashlight, so if they have their own it makes it a little easier, and it's also fun for them to play with.
we go a few times a summer... this summer it's been in yurts but we still cook, hang outside (only sleep inside)
We have camp equipment- stove, lanterns, etc that use propane. We pack a cooler for dinner and breakfast foods which we cook but lunch is usually easier. Eggs, pancakes, juice, etc for breakfast and for dinner last time we had sausage sandwiches. Sometimes we make pasta or tacos.
For kids- we brought bikes, bubbles, chalk (for the driveway), buckets, shovels, soccer ball. Lots of changes of clothes and layers. They got pretty dirty but loved it.

We are just heading home from our camping trip. We go at least 5-6 times a summer. Lauren loves it. She actually sticks to her sleep routine for the most part.
Makeep sure you bring plenty of clothes slchanges, and stuff to keep you warm at night.
We buy food ahead of time, and cook whatever we can ahead of time as well.

Tent or camper?
We started out tent camping. But bought a tent trailer about 2 years ago.
