We stay in suites or rent condos or houses whenever possible and spend a crapload of money on plane tickets. My H travels a ton for work and therefore has lifetime platinum status with Marriott, which gives us upgrades at any Marriott-owned properly. That helps a lot because they almost always give us a suite.
I suspect we will start getting two hotel rooms when the kids are older, but not for a while. My H is one of three, and they got two rooms when he and his sisters were all tweens/teens. They traveled quite a bit, including a big European vacation every other year.
We are doing a Disney cruise in March. They have cabins for families of five available, which is what we are doing. I will report back.
Middle of three here. We never really went anywhere but to visit family in MI and NH, and my LS and I got stuck sleeping together all the time because we shared a room anyways.
My parents drove a Chevy Caprice maroon and wood paneled shaggin wagon, . We were sooooooo safe driving, lol, my OS would spread out on the middle bench, and then we'd put down the back and my LS and I would lay on sleeping bags in the back for the long car rides. Add in both parents who smoked, and it they were awesome trips /sarcasm.
I was one of 3 and we never travelled, but we were also either poor or very middle class so that influenced things too.
I find hotel rooms now have a max capacity of 4 people, but in Europe it can even be 3, so i think provided you have the budget for getting extra hotel rooms when you travel it would be fine. You can also look at vacation rentals.

I'm one of 4. We did a road trip to my grandparents' house each summer and either stayed in Residence Inn or other suite places, or slept in 1 room w/ 3 kids in a bed and 1 on a cot. When we went on vacation, my parents booked a condo or suite.

I'm the oldest of three. Traveling was a pain in the butt. We always had a Minivan or suburban. Flying obviously gets more expensive with each kid.
We would all cram into one hotel room with two queen beds and one kid would sleep on a cot or the floor. Occasionally my parents would bring for a two room suite with sleeper sofa.
We went on vacation every year but only flew once - on a vacation to the Pacific Northwest. On that vacation we had two hotel rooms and my sister and I slept with my mom in one room while my brothers and dad slept in another.
Every other vacation we drove and rented a house or condo. We took a camper to Disney.
