So you were wanting to reface wood cabinets with laminate? Because they either paint them or they can cover them in white plastic, I'm not sure how else that would work. Honestly I think it would be expensive and look cheap. I really like your current cabinets, they aren't super amazing, but they are nice.
If you want them to be white, they need to be painted.
I think white cabinets are timeless. I've had them in 3 houses, all with kids. In house #2 it was a very stark white - that was a mistake and showed dirt very easily. In the other 2 houses I had/have creamy white and it doesn't show dirt badly at all. The only thing I notice is when DH drips/spills/splatters coffee all over the place which seems to happen way more often than it should. The 3 kids at home don't really get them dirty at all.
No they give you brand new wood doors and just cover the frames with a veneer. I haven't seen it in person yet but obviously don't want it to look cheap.

I guess I never really thought of it that way.
While it is true that you will have painted doors either way, it is the style of he door that really dictates whether or not it looks dated or does/doesn't look appropriate to the house.
I saw what a difference it made to change the doors at our old house, and it was amazing. It was a house in a cookie cutter neighborhood, so everyone had the same cabinets, and every neighbor who saw them thought they were a huge upgrade and that they were new cabinets.

Presumably you end up with doors that have been painted well, onto a surface that was properly prepared, and don't end up with painted cabinet doors and woodwork like you find in my house... which are now pealing.

Yeah, but hopefully if you paint you'll do it right, or pay someone to do it right. Sounds like you might have latex paint over oil paint/stain, which causes the peeling.

I try to always take trends into consideration when choosing something for my house but I never thought twice about painting my cabinets white. I love the way white kitchens are so bright and clean. I don't find that the upkeep with kids is a problem either. Stainless appliances are much harder to keep clean.
Like you, I didn't care for my cabinet doors and my top doors also have an arch (higher than yours). I do think changing the doors would have a big impact but it wasn't in my budget for now and painting alone has made me a million times happier with my kitchen. The arches don't even bother me as much.
