We've got tickets booked for Cancun for August when I'm 21-22 weeks and trying to decide where in the Cancun/PDC/Tulum/Holbox area to go. We're not really "resort" people but we want somewhere nice since it'll likely be a while before we get a solo vacation again. We were thinking Tulum but having a hard time finding one we like that also has availability.

Yep! It was awesome. I don't know that we would go back just because there are SO MANY AIs in the Caribbean. As this was our first AI, we don't have anything to compare it to.
We booked a Swim-Up Casitas Suite on allinclusiveoutlet.com for about $600/night. It was really awesome. The room was comfortable and well-appointed, but the individual pool off our patio was absolutely the best part. We hung out there a lot. H really enjoyed the swim-up bar at the pool. The food was good. We didn't go in the ocean at all because the shoreline was kind of rocky--their selling point is definitely the pools. HOWEVER, lying on the beach is AWESOME because they have all these four-poster beds on the beach. We camped out there one afternoon and I took an awesome nap. The service is also very good. People come around to the lounge chairs and beach beds with snacks and take drink orders.
We also took a day trip to Chichen Itza, which I wasn't really into due to the heat and the walking, but H really wanted to do it so I acquiesced. It was a long day, though, because it was 2.5 hours on a bus each way.

Agreed with pp. Excellence Playa Mujeres was heaven on earth. H and I have been twice and I can't wait to go again. We also enjoyed the Valentin Imperial Maya last year.
I've been to Aventura Spa Palace in Riviera Maya - I think it took maybe an hour from Cancun airport? Didn't feel like a long drive. It was wonderful though. When we booked (4 years ago) you got free spa dollars. It's an adult only resort but it's connected to a family one so we could go on their side for restaurants or activities but the kids couldn't come to our side. So it was super quiet and relaxing.
