I LOVE CABO!! One of my fave destinations actually. And we've been some pretty cool places.
We went with a bunch of friends and stayed at the Riu palace or something like that - it was fine, but I would probably spend more $$ and stay somewhere nicer if we went again. We were in Cabo San Lucas and we liked that location. We walked into town, to the marina/pier, etc. There was some excellent restaurants to dine at - I wouldn't do an all inclusive because there are so many good places to eat.
A bartender at our hotel gave us the name of a good mexican place to eat - looked like a dive and it was delicious. I will look at my photo albums later and see if i can figure out the name of the place. Overall, the tripadvisor recommendations were pretty good.
I took my husband there for his birthday this year too! It might not be fancy enough, but we stayed at the Cabo Surf Hotel because he's a surfer and it was quiet, which is what we wanted. The restaurant was very good and it was so peaceful. However you would need a car or you'd have to take taxis everywhere because it's just outside of SJC. My favorite restaurant we went to was Las Guacamayas in SJC.

I've stayed in "the corridor" and Cabo proper and I prefer to be closer to downtown. I own a timeshare at the Pueblo Bonito Rose on the main swimming beach and I really, really love the location. I like being able to walk out of my resort onto the beach and hit up the beach bars and restaurants. I also like being walkable to all the wonderful downtown restaurants. In my personal experience, you can get much better food for cheaper downtown than you can at the resorts.

Capella Pedregal or Esperanza if you want San Lucas, One and Only if you want Los Cabos!
Do you know if you can swim in the ocean at Pedregal? I thought the Pacific side was too rough to swim in, but those suites look AWFUL nice.
I think the only beach where you can swim is Medano. Capella Pedegral is wonderful, if you don't stay there make sure to eat at their restaurant which is built in to the side of a cliff and lit by candlelight. For great Mexican food we loved Los Tres Gallos and Maria Corona. Best margarita of my life was from this little stand outside of a mall in Cabo--Una Mas. All of their drinks are made with fresh squeezed juice and are like $3 a pop. I think we had 3-4 each before stumbling back to our hotel.
@sfgal530, I haven't been (yet), just researched for a rainy day. The fireplaces and plunge pools in the rooms would make up for a lack of a swimmable beach for me. CP would easily be my top choice of the three. I'm not a huge ocean swimmer though. As long as the pool is nice and the drinks are free flowing, I'm a happy camper.
Capella Pedregal was absolutely incredible. When we go back to Cabo, that's where we'll definitely stay again. It was amazing - the food was awesome, the margaritas we're the best we've ever had, and the staff knew what we wanted before we did. I cried when we left because I loved it so much.
It's pretty quiet and secluded. It was within walking distance of a lot of things, but also super easy to cab to places.
As for food, we loved Gordo Lele Tacos for a fun, quick lunch experience. We had dinner one night at Los Tres Gallos and it was soooo good. We sat outside under fruit trees with Christmas lights and watched them make the tortillas we ate. They were great about my dumb food allergies, and their cafe de olla (traditional Mexican coffee) was yummy. We also splurged at Capella's El Farallon one night and it was definitely worth it. Capella also has a really great brunch - like an entire table of pastries, another with fruit and cheeses, a juice bar, an area with hot foods - like tamales, and a couple of cooks to put together whatever kind of egg dish/omelette you wanted.
@sfgal530 that's outrageous for transfer service. There are plenty of independent agencies that can pick you up for 1/2 of that price. I think we paid $99 each way and that was for private limo service with a stop at WalMart for a full grocery shopping trip. Check out the tripadvisor Cabo board, it's one of the most active I've seen and it's full of great advice. The hot topics are on the right, I think car rental/service is one of them.
The drive to Capella is actually a pretty easy one, so you may want to consider a car rental. It would be nice to have the freedom to travel back and forth to town from the resort especially since I recall taxi service being $$ from the resort.
Ah, I'm so jealous! I told the husband we need to go back asap. We went Capella Ixtapa this past January and it wasn't as great as Pedregal. No welcome margaritas, mosquitos, and issues with feeding me things I'm allergic to.
If I remember correctly, we just used their car service for transport to and from the airport. I think it was $100 each way, though, so much more reasonable than what you were quoted.
By the way, if you're ever with a group in cabo and want to splurge check out pueblo bonito montecristo resorts. We've stayed there twice, the villas are incredible and you get full access to all of the pueblo bonito resorts.
