I'm making this so I can brag about my birthday dinner, which is pretty much all I've done today. Music on in the kitchen, no kid afoot, gin and tonic. oh and I picked the berries and veggies at a local farm this morning, nbd.
Lobster rolls on buttered potato rolls with butter lettuce. Red potato salad with a sweet mustardy dressing. Baked pattypan squash with a panko goat cheese stuffing. Grilled corn on the cob. And a blueberry peach pie with vanilla ice cream.
I made a one-pan dish with ground beef, cauliflower, carrots, and sweet potatoes with a curry seasoning blend. I'll eat some red potatoes if I have them left, otherwise some rice.

I CAN PARTICIPATE! I MEAL PLANNED THIS WEEK!!
We are having pork chops, sweet potatoes, and asparagus. I am looking for something fun to do with the pork chops to make it a little less boring, I am thinking a balsamic glaze.

My H is gone so I will probably have left over veggie tortilla soup - it was 100 degrees here yesterday and I made a gigantic pot. I love that it's full of veggies and I add a dollop of sour cream. 99% healthy. ?
Girls will have whatever I feel like cooking...... Which isn't feeling like much. Our van is in the shop until my H gets home later tonight so I don't have many options.
We are going to the county fair tonight after my turbo kick class so I guess I'll be eating fried stuff on a stick. I'm going to work extra super hard at the gym for it, ha.
I think I'm picking up a rotisserie chicken, potato salad, and maybe frozen green beans or something. Somewhere waaaay on the lazy side of the spectrum but not as bad for us as drive-through.
