it's the paleo version of rice. you basically take cauliflower and make it into little rice-like pellets. I am trying it for the first time this week - I don't have high hopes.

larzhope if you get cauliflower rice to taste good will you share the recipe? I haven't had success with it in the past but it could very well be user error
I'm going to put a beef roast in the slow cooker this morning. Tomorrow we'll have chicken tenders in mushroom sauce. Veggies with both. Not sure about the rest of the week, but I have a full schedule of training so dinners may end up defaulting to bacon and eggs or a protein shake. My poor H.
I know we are having pizza tomorrow night because its $10 Tuesday at papa murphy's and I have defrosted chicken in the fridge for tonight. I have nothing after that.
mkate710 and @uwhuskygirl - I will definitely report back. H hated the mashed "potatoes" I made w/ cauliflower so I think this will be a disaster, too, but I'm tired of eating sweet potatoes with everything (which H also doesn't like...)
Tonight I am grilling some chicken for chicken burgers. I'm going to have a sweet potato with mine while the others have French fries. Tomorrow I think I'm going to make a breakfast hash. Wednesday maybe tuna melts with a salad. I'm not to excited about it but H likes it and it requires little cooking. Thursday will be grilled chicken Caesar pita's with veggie side Friday is pork chops, corn casserole and roasted broccoli since that's the day the in-laws get in.

I'm using this, but instead of the curry paste and garam masala I'm just using a pre-mixed curry sauce in a jar
