I love picnics and try to make H do them with me during the summer This time a friend and I are going to do one so we've been talking about what to bring and I'm going to do a dessert.
- what do you like to pack for a picnic? recipes to share?
- dessert idea? I think hand pies would be cute, but I've never made them. Things like cookies are straightforward, but I was trying to come up with something cute
Love picnics! Most often we pack fancy sandwiches, fresh fruit, and chips/pretzels so we don't need utensils.
What about homemade ice cream sandwiches? Assuming you have a deep freezer and a good cooler, scoop ice cream between 2 cookies and freeze as cold as possible so your ice cream doesn't melt before it's time for dessert.

If you wanted to be fancy with strawberry shortcakes you could make your own whipped cream...because homemade whipped cream is THE only way to go. You could probably make your own shortcake too.

yes, I am very pro-homemade whipped cream although I do wonder how long it would hold up at a picnic?

Could you freeze homemade whipped cream? Idk the answer to that...never tried....Maybe if it was for even like 1hr or 30 min so it just is cool enough to stay cool a little longer...
It'd be better if you had a cooler, probably. It will hold for several hours at room temp, but it has been pretty hot lately.
I would do fun sandwiches, maybe some veggies and pretzel chips with some hummus, booze and hand pies sound perfect, I love hand pies and they travel well.

I will have a cooler, so at least that could help.
I usually go French picnic style if H isn't there (he doesn't like eqqs) with quiche, pickled asparagus rolled in proscuitto, cherries. Or bread & cheese. For desserts, I'll do a simple fruit tart (with frangipane not custard as it holds up better).

It was meeeeee! They are delicious! This is basically the receipe. I don't remember the exact original source. My coworker made them last Christmas. She said you make one short bread recipe. Bake half the mix in the bottom of a pan. Melt a bag of caramels with heavy cream in the microwave. Pour of par baked short bread.
