Would it be considered appropriate to include links to blog posts and videos in a thank you note to illustrate some of the work I have done, or is that too much? This would be directly relevant to the position I interviewed for.

I think it's a terrific idea. Open with the thank you note, then add a sentence along the lines of, "Our conversation about xyz brought to mind this and that site I published/produced/whatever the word is that I think you may find illustrative of my skills and style blah blah blah." Then close with a "Thank you again for meeting with me."
Ps I would do an email thank you; i normally so snail mail ones but for this I'd make an exception and do email. Good luck!
also, I'd only include one or two; I wouldn't go crazy with the links.

If it was brought it up during the interview and/or they asked to see some more of your work, I think it's okay.
In my thank you notes, I always thank the interviewer for their time, reiterate I'm interested and why I think I would be a good fit (not super aggressive, but more like "I really enjoy doing xyz, and know that's something you do a lot at abc, and would welcome the chance to marry the two". It may not be exactly that, but something along those lines. Anything they seemed to particularly pick up on during the interview, I might include that too.
