South Lake Tahoe. You can either road trip it or possibly fly into Reno, NV.
Lots of outdoor activities, hiking, some nice kid friendly "beaches" along the lake (I've been to one with a playground/park right along the water). Very laid back. And Red Hut Cafe for breakfast - amazing diner food!
I am quoting this just because the In Laws just moved to Reno and I want to remember these ideas.
I'm not a big fan of Reno in general. But Lake Tahoe is amazing! We live only about 2 hours away and my parents have a vacation home there, so we get up there a handful of times a year with them. Staying at Camp Richardson is fun if you want to rent more of a cabin/home than stay in a casino hotel.
There is tons of stuff to do all year round. Winter has all the snow activities and summer has lots of great water activities. Bonus is that it only gets to like 80-85 degrees tops in the summer. Much cooler than the triple digits we get down in the valley.
Here's a West Coast AI that I would love to go to www.hrhcancun.com, the Hard Rock resort in Cancun. It looks really fun and they have a lot of activities for kids, including activities with characters. (Angelina Ballerina, Thomas, Barney, Bob the Builder)

We've had a great time with the kids on mini-vacations to Denver Miami, and Austin.
DH and I went to Costa Rica sans kiddos, but the hotel we were at (4 seasons) appeared to be really family friendly.
We go to Atlantis in Nassau each year with the kiddos. We have a TS (not MM) and really enjoy having space to spread out and the ability to grocery shop and prep our own meals. I like having a place we go to each year as a family. We usually bring some extended family members with us to help with the kiddos. The kids' club is for ages 3+, so this will be the first year we can drop both the them off- until the next one is born!

How did you deal with car safety/transportation issues with young kids on these trips?
It depends on what kind of trip you want to do. If you stay at a nice resort and plan to stay there the whole time they will usually pick you up at the airport. If you do more of a travel/adventure trip which is what we prefer then you travel by "chicken bus" and there is no space for carseats as people are crammed in together. You seat the kids next to you or on your lap. If they still fit in wraps or carriers like the Ergo then you can wear them on the bus. If you rent a car then of course bring or rent carseats there.
In June we did basically a road trip through parts of Colorado. Denver, Estes Park, Colorado Springs, Mosca, back to Denver. Both kids (18mo and 3yo) enjoyed it. We liked Colorado Springs best, but they were all nice areas and we could have easily stayed a couple extra days in each place without being hard up for things to do. I probably wouldn't go before late spring, though, so I don't really think this rec is actually helpful for you.
