Sounds good to me. I would sub guac for sour cream, but that is just personal preference. You could also just cook it like regular taco meat though, and skip the patty step, since you're using tortillas anyway.
I think I'm going to cook some shrimp, chop it up, toss it with lemon-garlic dressing and some veggies, and stuff it in an avocado. Or eat leftover pasta. I'll figure it out when I get home.

I'll eat pretty much any variation of tacos so it sounds good to me.
I'm marinating some chicken in Italian dressing so I'll throw that on the grill along with some zucchini and squash some friends gave us from their garden. Maybe a salad too.
