So C begged me to buy eggplant at the farmers market so he can try it. I tried roasted and sautéed and he did not like either
Any suggestions on other ways to make eggplant for a 4 year old? (No cheese, cream cheese, sour cream, etc - I do have butter and milk substitute options just not cheese)
I second @tambcat. I usually mix in some salt and pepper, garlic and onion powder and oregano to the breadcrumbs, then I bake for 20 min per side on a cookie sheet at about 350. I top with tomato sauce for serving but DD will eat it just like that.
