What do you make? Especially if it takes you very little time? :-)

Boneless, skinless chicken breasts, not bone in. I feel like I have a ton of recipes that call for chicken breasts, but I'm too lazy (exhausted) to use a real recipe most nights.

My family is sick of me throwing BBQ sauce over it, throwing them in the oven, and calling it barbecue.

Quesadillas - either BBQ chicken or chicken & black bean

Throw in the crockpot with a jar of chile verde, then shred and serve with fixings for burritos.

Pound flat, roll up with cheese of your choice inside, bread the outside, bake.

Chop and saute with garlic and fresh parsley. Serve over pasta and whatever sauteed veggies I have on hand with EVOO and parmesan cheese. And more garlic.

I would broil them, cut them in thin strips, and then mix with bow tie pasta, sautéed zucchini, and pesto sauce (I'm planning to make this tomorrow btw, lol). 

I also make mustard chicken a lot with sautéed mushrooms and chicken parm.

If it's early in the day I'd throw them in the crockpot with salsa and seasoning and use the meat for tacos or quesadillas. Or with BBQ sauce and have sandwiches.

So so so easy is Iowa Girl Eats parmesan garlic chicken. Coat chicken in evoo, then top with a mixture of evoo, minced garlic, and parm. Put in oven for 20 minutes.

Tonight I chopped up two chicken breasts add salt & pepper and cooked them in a pan. I made linguini ,had pesto sauce in the fridge and tossed it all together.

Go to the store, get this spice packet.



Go get some cherry tomatoes, a couple baskets.

If you see fresh basil, grab it.

Pasta...you're going to need some.

Make sure you have olive oil and balsamic vinegar at home, if not...buy some.

If you want to get fancy, grab some fresh Parmesan cheese.



Throw it all together and bake in the oven, then chop up and toss over the cooked pasta.  Makes plenty for left overs.  It is DELICIOUS.

Keeping it really quick? Stir fry. Sautee broccoli, carrots, bell peppers, mushrooms, snow peas, etc with cut up chicken, then a quick sauce with soy sauce, rice vinegar, brown sugar, sesame oil, garlic and ginger.

If I'm feeling a little more ambitious and think about dinner before 6 pm (RARE) I'd put them in crockpot with a big can of crushed tomatoes, a diced onion, some grated ginger, salt, pepper, and a bunch of garam masala. Walla, chicken tikka masala! It's better with thighs but either works. I mix greek yogurt in before I serve.

Either dh BBQ them and I make salad and maybe rice, or I fry them and chop them up into a stir fried veggies, usually with rice.

Cilantro-lime chicken

Cut chicken breasts into cubes. Saute chopped garlic, add chicken and cook until it browns on both sides, add chicken bouillon cube/powder (optional), add the juice of 3-4 limes, simmer for 5 minutes then add a bunch of chopped cilantro.

My kids love this.
