The previous owners of our house painted a chalkboard on the wall with paint and put trim around it to make it look like a chalkboard. We have used it constantly for 6 years and it's great. We keep a calendar and lists on it that gets erased and redone every 6 weeks. So, I vote chalkboard paint! Sorry you've gotten to the frustrating part of the reno. Just go stare at your spice rack and windows and see if you feel better?
ETA: I've never used chalk proper on it - I can't stand the texture. I buy chalk markers at the local art supply store and they work great (although I have to use a magic eraser to erase).
I've seen those plastic chalkboards. They're the worst! Chalkboard paint has worked well for me before. You want to paint something smooth. So if you go with plywood, really sand it. Maybe paint a sheet of steel so you can use magnets too?

I have spray paint chalkboard paint that I just used last week and it worked well. I did do several coats allowing the full dry time and then seasoned the chalkboard. I've also Martha Stewarts paint in chalkboard and I like it but I enjoyed not having the brush strokes with the spray paint.
