I'm hosting a sprinkle for my sister in law. It is going to be on a Sunday from 11-2 and I'm planning on serving brunch. There are going to be about 16 people there. I want it to be a more formal feel versus casual. I'm going to be using china and cloth napkins. Right now I have planned to make
2 quiches Cheesy potatoes Bacon skewers Biscuit and gravy Yogurt parfait bar Muffins Coffee cake
Drinks. Coffee Orange juice Cranberry juice Mimosas Wine Cucumber water
Is this too much? Too little? Should I do like a spiral ham and maybe a spring mix salad or something?
I can see how ham would be a nice addition, but with everything else you have I'm not sure it's necessary. I definitely second the salad idea. Something fresh and green!

If you think prep time will be an issue, you might want to consider doing either coffee cake or muffins. You could always make several batches at once, split the batter, and add different berries, chocolate chips, nuts etc. to still give variety. I would add a salad as well. Broccoli or pea salad would be easier to prepare ahead of time than a regular salad.
