Yes, it's insulting to the chef if you feel the need to change the taste of what is presented to you. It's as if you are saying the dish is not good enough as is. To season something before you even taste it is in poor taste (see what I did there?).
I would probably overlook it in my house but I would side eye the person who did it in an upscale restaurant.
That's ridiculous. Are you seriously saying that the chef should feel insulted because a paying diner has different preferences for seasoning than the chef ? And you side eye someone for seasoning the meal she's shelling out big bucks for to her liking? That's goofy.

First of all, "The chef?" Nope. And who in the world is talking about an upscale restaurant. This is more far fetched than my syrup analogy. How do people not know that there are individuals in existence who just like what they like. Don't some of you put hot sauce on kraft mac? that just seems like a lot of work for the chef. It takes effort to be outraged. WHO HAS TIME? your life is too easy if you're mad about salt.
I agree, hence the reason a) IDGAF and b) the spice drawer is very close to the kitchen table. It's what I've been taught for proper situations though and as the guest, I'm mindful of this.

I don't think it's a comment on your cooking. As someone who like spicy food, it's easy to crave hot sauce with a variety of things. It has little to do with the way the meal is cooked, really.

honestly, (in theory) i think i'd be more offended if he tasted it and then asked for whatever. like, in the OP example, he knows he likes spicy food, so just spices off the bat. vs tasting my food and (presumably) thinking, "blech this needs spice" and adding more.

No, I wouldn't do this, but that's because I don't like hot sauce. I also wouldn't think twice about this if I were the host, because, seriously, who cares?? Try not to take things so personally.
My mother always salts the food before tasting. Honestly it does piss me off, especially since I'll try to make her food saltier to begin with (and I tell her I made hers salty, and she still salts it and then tells me later it was a little too salty. Excuse me why I go bang my head on a wall).
The hot sauce I wouldn't take offense to I guess, but it just seems so childish. Like my 7yo who won't eat meat that isn't slathered in ketchup, isn't that something you should grow out of? You can't eat one meal without hot sauce?
