I'm just replying regarding laminate. You might check HD and Lowes again. Talk to the kitchen people and ask what patterns you can get in the prefabs. When I was at HD you could pick the color (any Formica brand I think) and the edge style (3 choices or so) and the lengths. It could be pretty cheap that way.

Not what you want to hear, but I would leave the old countertops if you're really going to gut/reno in 2-3 years. We've been in our house 2.5 years - I promise, the time flies. Even the cheapest laminate if probably going to cost $500, right? And that's alot of waste for a couple years.

Oh, I missed the part about gutting in a couple years. I wouldn't get new countertops now. If anything, I would experiment with a countertop paint finish or that Ardex stuff that does a concrete surface over old laminate. Could be fun actually.
