I know we are talking about food a lot lately. When I go back to work, I would like to prepare my lunches for the week on Sunday night. I was thinking about salads in a mason jar, but I feel like I would be hungry afterwards. I'm also going to be pumping during lunch, so the easier the better.
We grill a bunch of chicken on Sundays and then do one or two sides each night for the next day. Many times the sides are steamer bags / frozen veggies. I do that and yogurt for lunch, but also have grapes, an apple, almonds, or kind bars as snacks.

Chicken salad lasts a few days. I make mine with plain Greek yogurt, grapes, almonds or walnuts, and red onion. (I forget though, are you dairy free again?) I often made a pot of soup on Sunday evenings for my lunches, but that could be hard to eat while pumping.
I used to make turkey burgers on the weekend and make lettuce wraps or just burgers during the week. You could do a lot of different flavors. Last year I liked a lot of different pasta salads, yogurt, kind bars, etc. Amy's organic frozen meals (the burritos and veggie pot pies) were my favorite on days I didn't actually make a lunch, but needed something quick.

Nope, not dairy free again, thank God. Stool sample came back negative for blood
Sometimes I cut up lots of veggies and put them in containers. Then I buy the individual sabra hummus cups. I bring that with some pita chips, some cheese (baby bel or sharp cheddar) and a yogurt.
I also like to put tuna or chicken salad in a container and bring crackers to put it on.
