My SIL had to have an emergency C-section due to some newly discovered heart issues. She is having a hard time with it all and I wanted to bring over some freezer meals. I wish I could just drop stuff off every week, but she lives over an hour away and I work full time and am in school full time.
We are heading over on Tuesday and I wanted to bring some food to last them a couple weeks and would love some suggestions. She is a major foodie so she supplements a lot with insulin to eat what she loves so I am not as worried about the diabetic part but the heart thing is new and she may not even have diet restrictions, I just don't want to quiz her when she is upset.
I am guessing I am just looking for things I can make that I can just use low sodium ingredients as necessary What was best for you right after giving birth? I am assuming stuff that is easy to prep and eat.
Should I just get some frozen stuff from TJ's? I will have only ~1 day to prep anything but really want to help.
I would suggest trying to do diabetic friendly meals too. Adding in extra insulin to eat what you want isn't healthy and makes the body work a lot harder. My favorite meal I take to new moms which is freezer friendly is the roast chicken with spring vegetables from this list. I add some extra lemon pepper seasoning to it. I have made a bunch of things from this list so I would just look and see what suits her dietary requirements. Annie's Eats also has a great list of meals to look through.

Most frozen meals will be high in fat and sodium, so if possible, I'd avoid those. A lot of diabetic recipes also follow heart healthy guidelines for sodium and fat.
Holly Clegg is one cookbook author that comes to mind.
