Today I am making a spinach and artichoke pizza for football, we'll eat that for lunch and add a salad to the leftovers for dinner.
Rest of the week:
-garlic chicken and broccoli stir fry over rice -sweet potato, black bean and veggie burritos -minestrone soup -veggie frittata and hash brown potatoes
H is working late a number of nights this week, so I'm on my own a lot and going for easy. So far:
Tomatillo Salsa Chicken in the crock pot (salsa chicken, but I make with a jar of Tomatillo salsa rather than a tomato salsa). I'll freeze some, and then use some for quesadillas one night.

Tonight: Pizza w/ my folks Monday: Stuffed Shells with Deer Burger Tuesday: Catfish, Green Beans & Sweet Potato Tator Tots Wednesday: Leftovers Thursday: Paprika Chicken w/ Egg Noodles & Green Beans Friday: Brat Patties w/ Raw Veggies & Fruit Saturday: Bonfire! I'm making Sloppy Joes & S'mores, friends are bringing the sides.

We just did our meal plan. Sunday: Soyaki marinated salmon on asian salad (bagged kind from Costco) Monday: Forage in the Fridge (DH has class in the evening) Tuesday: WW pasta with meat sauce Wednesday: Forage in the Fridge (DH has class in the evening) Thursday: Peach BBQ chicken on the grill Friday: Leftovers Saturday: Parmesan sage crusted pork chops

I don't know what order we will eat it all but last night I made
- bbqed pulled pork - cuban pulled pork and veggies - spaghetti squash with meat sauce - meat mix for taco salads (meat mix includes ground beef, black beans, green chilis and taco mix - to add to salad, cheese, salsa and avocado) - a crustless quiche containing sauteed onions, broccoli, feta and parmesan
edit:
- a 'mash' made of potatoes, sweet potatoes, butternut squash, carrots and cauliflower, made with coconut milk and butter. So good. We are going to eat the bbqed pulled pork on it.
Cooking a pork roast today, pulled pork sandwiches tomorrow with the leftovers.
Tuesday is stew in the crockpot. Wednesday will be spaghetti. Thursday, leftover stew. (DS1 has a football game at 7 so that will be good and quick) Friday we will go out/order out.
This is the most organized I have been since school started.
