3 lbs top round 3 lbs ground beef 6 cloves garlic, chopped One 8-ounce can tomato sauce 2 15-once cans of diced tomatoes 6 tablespoons chili powder 3 teaspoon ground cumin 3 teaspoon ground oregano 3 teaspoon salt 3/4 teaspoon cayenne pepper 1 diced onion 1 green pepper 3 cans of beans (I think we used black, kidney, and pinto since I forgot to buy any)
I've stopped using ground beef in my chili, but will use a chuck roast cut into small pieces (yeah, it's a pain in the butt) and browned. I pull the meat out and soften chopped onions and chilis, along with about half a head of garlic. When they cook down, I throw the meat back into the pot along with beef broth and a bottle of beer This way, you are forced to simmer the chili for awhile in order to break the meat down and that simmering really does enhance the flavor.
The last few times, I've been throwing chopped jalapeno and serrano chilis into it, and the fresh chilis seem to add an additional dimension to it. I add chili powder, cumin, oregano and smoked paprika as spices, which I roast before hand by themselves, and then throw it into the veggie mixture. Unfortunately, I just don't measure but use the TLAR method (that looks about right).
Towards the end, a few cans of diced tomatoes and rinsed beans (or not) get tossed in. If it's too thin, I'll thicken it up by stirring in a little cornmeal.

I'm lazy about chili.
I brown a pound of ground beef along with half an onion and a red pepper, diced. Season that with a little garlic salt. Once the onions are tender, dump it all in the crock pot and toss in one can of cannellini beans and one of red kidney beans. Add frozen or canned corn and carrots. Finish off with one jar of Heinz chili sauce and 1/4-1/2 cup of water. Cook on low for 6 hours.
It's not too spicy but that's b/c I'm making it for my kids. Throw some of this and a piece of corn bread in front of my oldest and she'll actually eat dinner. :-)
This isn't a traditional chili recipe, but we love Pink Parsley's Quinoa Chicken Chili, and it's a crock pot recipe. I made it last week and we had it as is one night, and then made chili mac with is another night. And I still have some left in the freezer!

This is my super quick recipe - always serve with cheese on top and tortilla strips optional.
We love this. Up here chili typically has beans, but when I have brought it to parties there have been no complaints. I like to make a batch on the weekend for dinner and then lunches for the week.
