So, I have been trying to be good about meal planning so we can eat dinner at home. I was good before I got pregnant, but then I was so sick the first couple of months, I couldn't do anything when I got home.
I am trying to get back on track, but am having a hard time.
The girls have activities every night except for Wednesday. This means I don't get home until between 6:30 and 7:30. I feel like this is to late to start dinner from scratch. I do have some crockpot recipes and was trying to plan ahead this week and make a freezer meal or two to make it through.
Any suggestions on what I can do besides freezer and crockpot meals? I know this is probably the best solutions, but I don't always have free time on the weekend to get things fully prepped.
You could make an extra meal Sunday that has enough for Mon & Tues, then on Wed make something for that night and Thurs. Then do take out, crockpot or freezer meal on Fridays.
I'm not a working mom yet, but try doubling up the amounts you're cooking and have the same meal two days in a row--that way you only have to cook every other day.

Some sort of casserole? You can make it up and throw it in the fridge the night before and then just pop it in the oven for a half hour.
My favorite is pizza casserole. Rotini noodles, pizzas sauce, mozzarella, and whatever pizza toppings you like (I brown sausage, mushrooms, onion, green pepper, and pepperoni.

Also, sometimes the girls just get chicken nuggets and I'll make something for me and H that's different. They can't wait that long.
We don't eat that many things. We prob eat spaghetti twice a week. And homemade chicken nuggets twice a week.

I do this with casseroles, lasagna, and enchiladas a lot also. I prep it the night before or during nap time stick it in the fridge and then just stick it in the oven around dinner. It takes a lot of pressure off the end of the day
We eat quesadillas or burritos at least once a week. We always have the basic ingredients on hand: tortillas, cheese, canned beans, salsa. Maybe avocado. It takes less than 10 minutes to throw everything in a tortilla and either toast it in a skillet, or heat it up in the microwave.
Also, if eating out is the alternative, it might not be a financial stretch to do Plated. I love it, and the recipes are all designed to be ready pretty quickly.

I'm in the same boat. First sick with ms, now sick with a bad cold and just exhausted. I'm not in the mood to cook. We do quick meals like quesadillas, breakfast for dinner or paninis frequently. Add a veg as a side and you are all set!
