I am going to a lunch thing and said I'd bring fruit/cheese kabobs. I bought Brie & cheddar, melon & pineapple.
I want to cube it all and pop one of each on the skewers. I was planning on doing it tonight, but now am wondering if the fruit juice will ruin the texture of the cheeses? Any thoughts? Anyone done this before?

why are you torturing cheese?
I have an allergy to pineapple and can tell when pieces have been stored next to/with other things. So I'd guess it isn't a great idea to put them all to the stake too early.
I wouldn't do it tonight because the brie might take on the flavour of the fruit and it will just taste funny. If anything, just prepare it all tonight and then store in separate containers.
I wouldn't think that Brie would lend itself well to skewering. It's going to get pretty soft as it warms up. And no pineapple. Or melon. Apples, pears, grapes.

All of this. I can't picture Brie on skewers, or even cubed it in the first place - it's so soft, even when cold. And your fruit choices don't really go with either cheese. And Brie and cheddar also don't go together. lol. Sorry! I just don't want you to have a bad dish.
If you have grapes at home, I would use those with the cheddar. If you don't, then I think it would be best to skip cheese altogether and just do fruit skewers. And if you have any crackers or crostini at home that will go with Brie, put them out with the Brie on a separate tray.

My son has a pineapple allergy. It's such a random thing and a giant pain to eat anything with fruit in it anywhere as it almost always has pineapple.
Hmm, I've just always soaked them whether going on the gril or not but possibly - could it be - I've not needed to do that. Wasn't there a thread this week about things you do just because you do them and don't know why... something like that. This is probably one of those things I've just been doing.

I never remember to soak them ahead of time so I read a tip to soak a bunch and put them in a freezer in a ziploc bag. It works great.
I'm so sad for the poor, impaled brie. I hope it met it's end on a dignified platter and not molded around a pointy stick.
