I limit fruit like blueberries after a certain point just because I don't want to deal with the explosive diapers that result, but no, I don't really limit snacks. She's pretty good about regulating her own intake and well within the normal weight range - if she's panhandling for food, she's hungry. If she's had a decent amount of fruit, I offer something else. (Cheese, dry cereal, crackers with PB, milk, graham crackers/animal crackers, raisins, yogurt, stuff like that.)
ETA: Sometimes she has quite a bit to snack on later (4:30 - 5:00), but we often don't eat dinner until 6:30 - 7:00. She's hit or miss on eating dinner. I don't usually sweat it, because she eats a decent amount/variety earlier in the day and I'd rather she eat clementines, cheese, a piece of bread, and milk at 5:00 than be crabby until 6:30 when dinner is ready and throw it all on the floor out of hanger.
I've only recently started limiting snacks before dinner since it's just been recent that he won't melt down without "one more snack!" I do try to give him things that will count towards dinner, such as yogurt, cheese, a smoothie, etc. so snacks but healthier ones.
Also when he was your DS' age, we would often feed him dinner first and then eat ourselves once he was in bed. Though then you're not eating with him so it's not a perfect method either.

I try to limit snacks but sometimes I use food to keep my kid quiet at the supermarket or on the bus. If my DD doesnt eat lunch then I just save it for the afternoon snack.
The morning snack is something light like a piece of fruit or some bread and chesse. The afternoon snack is bigger.
