I need 2 more dinners on my menu this week. In return, I offer you my veggie spaghetti sauce recipe :
2 cans Muir Glen Chunky Tomato Sauce 1 6oz can tomato paste ~1 cup onions ~3-4 cloves minced garlic 1-2 finely shredded zucchini 10 large crimini mushrooms, cut to preference. 2 minced red bell pepper 1/4th cup sugar 1 heaping tablespoon dried oregano 2 teaspoons dried basil Salt and pepper 2 tablespoons of butter
Saute all veggies in half of butter over medium-high heat, add sauce, bring to light simmer, add sugar, dried spices, more butter, stir. Simmer on low uncovered for about 2 hours. Feed small army.
I took out chicken breasts to thaw, but I can't find a single recipe that looks good to me right now. It's freezing, windy, and dreary out. I need a comfort food recipe.
