I do not host, as my grandma insists it is her holiday, but the menu rarely changes. My DH loves eating with my family for the lack of green vegetables. I have taken some in the past, but they don't get eaten, so I go with it. It is not fancy and one day a year it works!
Apps: Mom is bringing cold shrimp I'm making cranberry-apple baked brie (made it last year, it's insanely good with Trader Joe's brioche crisps), and cornbread-chorizo stuffed mushrooms
Dinner: Cider-brined and glazed turkey Pancetta, leek and mushroom stuffing Brown butter mashed potatoes Acorn squash wedges with rosemary and shallots Steamed carrots (the only veggie my brother will eat) Roasted brussel sprouts Green beans with pearl onions and bacon Spiced pumpkin buttermilk biscuits Regular buttermilk biscuits Cranberry sauce
Desserts: Spiced cranberry-apple pie Pumpkin layer cake with white chocolate buttercream
We go out to dinner on Thanksgiving day with my family, but H's family has Thanksgiving together the Saturday after. I don't know what is on their menu (his aunt hosts) but I plan to make and bring this pie: Pumpkin Cream Pie

I'm hosting 9 adults and still refining my menu. I can't decide on the stuffing - I might just go classic/basic w/apples and sausage and leeks. I already made my turkey stock and I'm making pie crusts tomorrow.
Apps - artichoke dip, crudite, cheese, olives, etc.
