She always mixed it in, LARGE crumbles, not thin ones like pancetta. Cook it to very crisp/hard crumbles, makes a nice contrast to the silky/smooth texture of everything else. Just leave out ANY extra salt as you'll get enough from the bacon.
Yeah, I keep it simple with what I have. mayo, mustard, pickles if I have them, , maybe a tiny bit of pickle juice, pepper and salt (but taste since the pickle juice can be salty enough), then paprika on top
