It's supposed to be what they can get fresh that day, but I think they also cycle through a few standard dishes.
It's fun to go with a group.

Pasta Freska on Westlake and Staple & Fancy in Ballard both have this. Pasta Freska is a bit more traditional and Staple & Fancy is a little more adventurous. Both are great - enjoy!
