Can I make ahead & freeze macaroni and cheese (homemade)?
No
I do this all the time with martha stewarts recipe and never had a problem. I freeze it before I bake it then put it into the oven frozen. Never had the sauce separate.
I'll confess, one of my knicknames was "Martha" growing up....so tag me or redheadbaker if you have more questions about prep and dishes.
I love that the mashed potato debate is about having them or not. I'll twist the knife and note that the best mashed potatoes are made with a ricer, or a food mill, and they're prepped right before serving (using an electric beater and even a potato masher brings out too much of the starch and can make them gluey). But who has time for a ricer or food mill right before dinner on turkey day? (If you want to go that route, make 'em as close to service as possible and keep them warm on a double boiler).
Totally agree.
I make them a little bit ahead and put them in the crockpot on warm.
Why do people love Thanksgiving dinner so much? Someone remind me to confess my dislike for it in a more appropriate thread.
I agree. It is not my favorite meal of the year, and it is made worse by the fact that various family members insist upon "traditional" recipes (read: casseroles made with canned crap because that is how great grandma so and so did it) such that efforts to make the food fresher and tastier are met with outrage. And I will never understand the appeal of pumpkin pie.
But I will take any excuse to eat mashed potatoes...

i haven't had a problem with the sauce but the pasta gets funky. Maybe it depends on the recipe?
