Last week we had a staff potluck luncheon and I made Pumpkin Spice Cider and everyone loved it.
I thought it was too sweet and if I ever make it again, I might skip the brown sugar and use diet ginger ale.
Pumpkin Spice Punch
1 15 oz. can pumpkin purée
1cup dark brown sugar, packed
3 teaspoons pumpkin spice mix
1/2 gallon Apple cider, chilled
2 2 liter bottle of ginger ale, chilled
Optional toppings: whipped cream, crushed gingersnaps
Mix the pumpkin, pumpkin spice, and brown sugar until the sugar is dissolved. Add the cider and stir until mixed.
Top each serving with whipped cream and sprinkle with crushed gingersnaps.
If making this for children, you may want to substitute vanilla ice cream in addition to the whipped cream.
If making this for adults, it was the consensus that either vanilla vodka or spiced rum would be a good add in for this punch.
